St. Patty's Day is this weekend, which means we're going all Irish this week.

yes, that's my hubs with his St. Patty's Day version of "green beer". Green Chardonnay. Just to class it up.

Anywho, I was just thinking about that St. Patty's Day and how my husband was the only one getting festive. Trying to cheer me up after a bad day by being his usual silly self.
So I thought maybe this year I should do something for him for St. Patty's Day. Cheer him up after a long day at work.
To show him how much i love him, and totally get him on the most meaningful level...
The Beer Level
I really like this cake. It's springy and moist and rich. It has a deep chocolate flavor, but at the same time, it really isn't what I would consider to be very sweet.
Hence the Baily Scented Whipped Cream.
Guinness Chocolate Cake
Baking Pam (for pan)
9 oz unbleached flour
2 c. sugar
3/4 c. good quality cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c. heavy cream
4 oz. bittersweet chocolate
1/2 c. vegetable oil
2 large eggs
1 tsp vanilla extract
1 12oz bottle Extra Stout Guinness beer
Preheat Oven to 350.
Place all dry ingredients in your mixing bowl. mix on low till all blended and "sifted". This is my cheat way of sifting dry ingredients. In a separate bowl, place cream and chocolate. Heat in microwave for about a minute. Stir. Continue heating at 30 second intervals until chocolate has melted. To the cream, add the remaining wet ingredients. Whisk together to combine. Add the wet ingredients to the dry ingredients in the bowl with the mixer on low. Bring up the speed to medium and beat for about a minute. Pour batter into a large (12 c.?) bunt pan, or 2 9" cake pans covered with a light spray of Baking Pam. Bake for 30 minutes, or until a knife inserted in the center comes out clean.
Let cool in pan on a wire rack.
Baily Scented Cream
1 pint heavy whipping cream
2 TBSP sugar
1 TBSP Baily Irish Cream Liquor
Place all ingredients in your mixing bowl with your whisk attachment armed. Whip at med-high speed till peaks form. Make sure not to over beat. It helps if the bowl and the beater is cold.
It's good! I think even my husband, who isn't into sweets, will really like this one. If your a fan of Guinness or any stout beer, then you are going to want to give this one a shot. :)
